We LOVE pancakes at over here! But sadly, gluten free, cow dairy free and pancakes don't go together too well! They usually end up gummy.
That is until now! My husband has tweaked and tested various recipes over the years and has finally come up with a recipe that tastes good and isn't gummy. The key...almond flour!
Almond flour is the key to success in gluten free baking!
Dry Ingredients
1/2 cup brown rice flour
1/2 cup potato starch
1/2 cup GF all purpose flour
1/2 cup almond flour
2 tsp baking powder
1 tsp salt
Wet Ingredients
2 eggs
1/2 tsp GF vanilla extract
1/4 c classic olive oil
1 cup unsweetened goat yogurt
3/4 cup almond milk
Mix up your dry and wet ingredients separately. Then mix together. Add more almond milk a bit at a time until you get your desired consistency. Then pour on the hot cast iron pan and cook on both sides.
